  • 1 kg (2.2 lbs) Icelandic langoustines, cleaned and deveined
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 1 lemon, juiced and zested

Instructions:

  1. Prepare the Langoustines:
    • Rinse the langoustines under cold water and pat them dry with paper towels.
    • Using kitchen shears, cut along the underside of each langoustine to remove the digestive tract.
  2. Cook the Langoustines:
    • In a large skillet, melt the butter over medium heat.
    • Add the minced garlic and cook for 1-2 minutes until fragrant.
    • Add the langoustines to the skillet in a single layer, making sure not to overcrowd the pan.

    • Season with salt, pepper, lemon juice, and lemon zest.
  3. Serve:
    • Transfer the cooked langoustines to a serving platter.
    • Garnish with chopped fresh parsley.
