Icelandic Kjötsúpa Recipe for 4 People
Ingredients:
- 500g lamb meat, diced
- 2 carrots, peeled and sliced
- 2 potatoes, peeled and diced
- 1 onion, finely chopped
- 2 celery stalks, sliced
- 1 leek, sliced
- 1 turnip, peeled and diced
- 1 parsnip, peeled and sliced
- 1/4 cup rice
- 2 bay leaves
- 1 teaspoon dried thyme
- Salt and pepper, to taste
- Fresh parsley, chopped for garnish
Instructions:
- Prepare Ingredients:
- Rinse the diced lamb meat under cold water and pat dry with paper towels.
- Peel and chop all vegetables as directed.
- Cook Lamb:
- In a large pot, heat some oil over medium-high heat.
- Add the diced lamb meat and cook until browned on all sides.
- Add Vegetables and Herbs:
- Add the chopped onion, carrots, potatoes, celery, leek, turnip, and parsnip to the pot.
- Stir in the rice, bay leaves, and dried thyme.
- Season with salt and pepper to taste.
- Simmer:
- Pour enough water into the pot to cover all the ingredients.
- Bring the mixture to a boil, then reduce the heat to low.
- Cover and simmer for about 1.5 to 2 hours, or until the vegetables and meat are tender.
- Serve:
- Once cooked, remove the bay leaves from the pot.
- Ladle the Kjötsúpa into bowls and garnish with freshly chopped parsley.
