Pastéis de Bacalhau Recipe for 20 Pastéis
Ingredients:
- 500g (1.1 lbs) salted codfish
- 500g (1.1 lbs) potatoes
- 2 eggs
- 1 small onion, finely chopped
- 2 cloves of garlic, minced
- 1/4 cup fresh parsley, finely chopped
- Salt and pepper to taste
- Vegetable oil for frying
Instructions:
- Prepare the Codfish:
- Soak the salted codfish in water for at least 24 hours, changing the water several times to remove excess salt.
- After soaking, drain the codfish and shred it into small pieces, removing any bones and skin.
- Cook the Potatoes:
- Peel the potatoes and cut them into chunks.
- Boil the potatoes in salted water until they are tender.
- Drain the potatoes and mash them thoroughly.
- Mix the Ingredients:
- In a large mixing bowl, combine the shredded codfish, mashed potatoes, chopped onion, minced garlic, and chopped parsley.
- Season the mixture with salt and pepper to taste.
- Crack the eggs into the bowl and mix everything together until well combined.
- Form the Pastéis:
- Take small portions of the mixture and shape them into small, oval-shaped patties, about the size of a golf ball.
- Fry the Pastéis:
- Heat vegetable oil in a deep frying pan or pot over medium heat.
- Carefully place the pastéis into the hot oil, frying them in batches to avoid overcrowding.
- Fry the pastéis until they are golden brown and crispy on the outside, about 3-4 minutes per side.
- Once fried, remove the pastéis from the oil and drain them on paper towels to remove excess oil.
- Serve and Enjoy:
- Serve the pastéis de bacalhau hot, accompanied by your favorite dipping sauce or enjoy them as they are.
