Tunisian Couscous

 

Ingredients :

     For the Couscous:

  • 2 cups couscous
  • 2 cups water
  • 1 tablespoon olive oil
  • Salt to taste

     For the Stew:

  • 500g lamb or chicken, cut into pieces
  • 2 onions, finely chopped
  • 2 tomatoes, diced
  • 2 carrots, peeled and sliced
  • 1 zucchini, sliced
  • 1 bell pepper, diced
  • 1 cup chickpeas, cooked or canned
  • 1/2 cup raisins (optional)
  • 1/4 cup tomato paste
  • 2 tablespoons olive oil
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon ground cinnamon
  • 1 teaspoon turmeric
  • Salt and pepper to taste

     For the Garnish:

  • Fresh coriander or parsley, chopped
  • Lemon wedges

Instructions:

  1. Prepare the Couscous:
    • In a large bowl, combine the couscous, water, olive oil, and a pinch of salt. Let it sit for about 10 minutes until the couscous absorbs the water. Fluff with a fork to separate the grains.
  2. Cook the Meat:
    • In a large pot, heat olive oil over medium heat. Add the chopped onions and cook until softened. Add the meat pieces and brown on all sides.
  3. Add Spices and Tomatoes:
    • Stir in the ground cumin, ground coriander, ground cinnamon, turmeric, salt, and pepper. Add diced tomatoes and tomato paste. Mix well.
  4. Add Vegetables and Chickpeas:
    • Add carrots, zucchini, bell pepper, chickpeas, and raisins (if using) to the pot. Pour enough water to cover the ingredients. Bring to a boil, then reduce heat, cover, and simmer until the meat is tender.
  5. Steam the Couscous:
    • While the stew is simmering, place the couscous in a steamer basket or a couscoussier. Steam for about 20 minutes or according to package instructions.
  6. Serve:
    • Fluff the couscous with a fork and transfer it to a serving platter. Arrange the stew on top of the couscous.
  7. Garnish and Enjoy:
    • Garnish with chopped fresh coriander or parsley. Serve with lemon wedges on the side.
