Ingredients :

- 2 cups water

- 500g lamb or chicken, cut into pieces
- 2 onions, finely chopped
- 2 tomatoes, diced
- 2 carrots, peeled and sliced
- 1 zucchini, sliced
- 1 bell pepper, diced
- 1 cup chickpeas, cooked or canned
- 1/2 cup raisins (optional)
- 1/4 cup tomato paste
- 2 tablespoons olive oil
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 1 teaspoon ground cinnamon
- 1 teaspoon turmeric
- Salt and pepper to taste
For the Garnish:
- Fresh coriander or parsley, chopped

Instructions:
- Prepare the Couscous:
- In a large bowl, combine the couscous, water, olive oil, and a pinch of salt. Let it sit for about 10 minutes until the couscous absorbs the water. Fluff with a fork to separate the grains.
- Cook the Meat:
- In a large pot, heat olive oil over medium heat. Add the chopped onions and cook until softened. Add the meat pieces and brown on all sides.
- Add Spices and Tomatoes:
- Stir in the ground cumin, ground coriander, ground cinnamon, turmeric, salt, and pepper. Add diced tomatoes and tomato paste. Mix well.
- Add Vegetables and Chickpeas:
- Add carrots, zucchini, bell pepper, chickpeas, and raisins (if using) to the pot. Pour enough water to cover the ingredients. Bring to a boil, then reduce heat, cover, and simmer until the meat is tender.
- Steam the Couscous:
- While the stew is simmering, place the couscous in a steamer basket or a couscoussier. Steam for about 20 minutes or according to package instructions.
- Serve:
- Fluff the couscous with a fork and transfer it to a serving platter. Arrange the stew on top of the couscous.
- Garnish and Enjoy:
- Garnish with chopped fresh coriander or parsley. Serve with lemon wedges on the side.
