Chicken Yassa Recipe for 4 People

Ingredients:

  • 4 bone-in, skin-on chicken thighs
  • 4 tablespoons vegetable oil
  • 3 large onions, thinly sliced
  • 4 cloves garlic, minced
  • 1 tablespoon Dijon mustard
  • 2 tablespoons white wine vinegar
  • 2 tablespoons soy sauce
  • 2 bay leaves
  • 1 teaspoon thyme
  • 1 teaspoon chili powder (optional)
  • Salt and black pepper, to taste
  • 4 cups cooked jasmine rice, for serving

Instructions:

  1. Marinate the Chicken:
    • In a bowl, mix Dijon mustard, white wine vinegar, soy sauce, minced garlic, thyme, and chili powder (if using).
    • Place chicken thighs in the marinade, ensuring they are well coated. Let it marinate for at least 1 hour, or overnight for better flavor.
  2. Sear the Chicken:
    • Heat vegetable oil in a large skillet over medium-high heat.
    • Remove chicken from the marinade (reserve the marinade) and sear each side until golden brown. Remove chicken and set aside.
  3. Saute Onions:
    • In the same skillet, add sliced onions and cook until softened and golden brown.
  4. Simmer with Marinade:
    • Pour the reserved marinade over the onions. Add bay leaves and season with salt and black pepper.
    • Bring to a simmer, then return the seared chicken to the skillet.
  5. Braise the Chicken:
    • Cover the skillet and let the chicken braise in the sauce for about 30-40 minutes or until cooked through.
  6. Serve:
    • Serve the Chicken Yassa over cooked jasmine rice.

Optional:

  • Garnish with chopped fresh parsley or cilantro for a burst of freshness.
