Russian Buckwheat Recipe for 4 People

Ingredients:

  • 1 cup buckwheat groats
  • 2 cups water
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons butter or vegetable oil
  • Salt, to taste
  • Fresh parsley or dill, chopped for garnish

Instructions:

  1. Rinse Buckwheat:
    • Rinse the buckwheat groats under cold water until the water runs clear. Drain well.
  2. Saute Onion and Garlic:
    • In a saucepan, heat the butter or vegetable oil over medium heat.
    • Add the finely chopped onion and minced garlic. Saute until softened and fragrant.
  3. Add Buckwheat:
    • Add the rinsed buckwheat groats to the saucepan. Stir well to coat the grains with the onion and garlic mixture.
  4. Cook Buckwheat:
    • Pour in the water and add salt to taste.
    • Bring the mixture to a boil, then reduce the heat to low.
    • Cover the saucepan and simmer for about 15-20 minutes, or until the buckwheat is tender and the water is absorbed.
  5. Fluff and Serve:
    • Once the buckwheat is cooked, fluff it with a fork to separate the grains.
    • Transfer the buckwheat to a serving dish and garnish with chopped fresh parsley or dill.
  6. Serve:
    • Serve the Russian buckwheat as a delicious and nutritious side dish with your favorite main course.

Optional:

  • You can enhance the flavor of the buckwheat by adding sautéed mushrooms, bell peppers, or carrots.
