Koshari Recipe for 4 People
Ingredients:
- 1 cup dried lentils
- 1 cup long-grain white rice
- 1 cup elbow macaroni
- 1 can (400g) of cooked chickpeas, drained and rinsed
- 4 large onions, thinly sliced
- 4 cloves garlic, minced
- 2 tablespoons vegetable oil
- 1 can (400g) of crushed tomatoes
- 2 tablespoons tomato paste
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- Salt and pepper, to taste
- Hot sauce, to taste (optional)
- Vinegar, to taste (optional)
- Fresh parsley or cilantro, chopped for garnish
Instructions:
- Cook Lentils:
- Rinse the lentils under cold water. Place them in a pot with 2 cups of water. Bring to a boil, then reduce heat and simmer for 15-20 minutes until tender. Drain and set aside.
- Cook Rice and Macaroni:
- Cook the rice according to package instructions. In a separate pot, cook the macaroni until al dente. Drain both and set aside.
- Prepare Chickpeas:
- Drain and rinse the canned chickpeas. Set aside.
- Caramelize Onions:
- Heat vegetable oil in a skillet over medium heat. Add sliced onions and cook, stirring occasionally, until golden brown and caramelized. Remove from heat and set aside.
- Prepare Tomato Sauce:
- In a saucepan, heat some vegetable oil over medium heat. Add minced garlic and cook until fragrant.
- Stir in crushed tomatoes, tomato paste, ground cumin, ground coriander, salt, and pepper. Cook for 5-7 minutes until the sauce thickens.
- Assemble Koshari:
- In individual serving bowls or one large serving dish, layer cooked rice, lentils, and macaroni.
- Top with cooked chickpeas and caramelized onions.
- Pour the tomato sauce over the top.
- Serve:
- Garnish with fresh parsley or cilantro.
- Serve hot with optional hot sauce and vinegar on the side.
Optional:
- Add fried crispy onions or garlic chips as an extra topping for more flavor and texture.
