Syrian Muhammara Recipe for 4 People
Ingredients:
- 3 large red bell peppers
- 1 cup walnuts, toasted
- 1/2 cup breadcrumbs
- 2 cloves garlic, minced
- 2 tablespoons lemon juice
- 2 tablespoons pomegranate molasses
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper (optional)
- Salt, to taste
- Fresh parsley, chopped for garnish
- Pomegranate seeds for garnish (optional)
Instructions:
- Roast the Red Peppers:
- Preheat your oven to 200°C (400°F).
- Place the whole red peppers on a baking sheet lined with parchment paper.
- Roast in the oven for 20-25 minutes or until the peppers are charred and softened.
- Remove from the oven and let them cool. Once cooled, peel off the skins and remove the seeds.
- Prepare the Muhammara:
- In a food processor, combine the roasted red peppers, toasted walnuts, breadcrumbs, minced garlic, lemon juice, pomegranate molasses, olive oil, ground cumin, paprika, cayenne pepper (if using), and salt.
- Blend until smooth and creamy, scraping down the sides of the processor bowl as needed. Adjust seasoning to taste.
- Serve:
- Transfer the Muhammara to a serving bowl.
- Garnish with chopped fresh parsley and pomegranate seeds (if desired).
- Serve with pita bread, crackers, or vegetable sticks for dipping.
Optional:
- For a smokier flavor, you can grill the red peppers instead of roasting them in the oven.
- Adjust the level of cayenne pepper according to your preferred level of spiciness.
