Syrian Muhammara Recipe for 4 People

Ingredients:

  • 3 large red bell peppers
  • 1 cup walnuts, toasted
  • 1/2 cup breadcrumbs
  • 2 cloves garlic, minced
  • 2 tablespoons lemon juice
  • 2 tablespoons pomegranate molasses
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper (optional)
  • Salt, to taste
  • Fresh parsley, chopped for garnish
  • Pomegranate seeds for garnish (optional)

Instructions:

  1. Roast the Red Peppers:
    • Preheat your oven to 200°C (400°F).
    • Place the whole red peppers on a baking sheet lined with parchment paper.
    • Roast in the oven for 20-25 minutes or until the peppers are charred and softened.
    • Remove from the oven and let them cool. Once cooled, peel off the skins and remove the seeds.
  2. Prepare the Muhammara:
    • In a food processor, combine the roasted red peppers, toasted walnuts, breadcrumbs, minced garlic, lemon juice, pomegranate molasses, olive oil, ground cumin, paprika, cayenne pepper (if using), and salt.
    • Blend until smooth and creamy, scraping down the sides of the processor bowl as needed. Adjust seasoning to taste.
  3. Serve:
    • Transfer the Muhammara to a serving bowl.
    • Garnish with chopped fresh parsley and pomegranate seeds (if desired).
    • Serve with pita bread, crackers, or vegetable sticks for dipping.

Optional:

  • For a smokier flavor, you can grill the red peppers instead of roasting them in the oven.
  • Adjust the level of cayenne pepper according to your preferred level of spiciness.
