Mexican Quesadillas Recipe for 4 People

Ingredients:

  • 8 large flour tortillas
  • 2 cups shredded cheese (cheddar, Monterey Jack, or a mix)
  • 1 cup cooked and shredded chicken, beef, or beans (optional)
  • 1/2 cup diced tomatoes
  • 1/4 cup diced red onions
  • 1/4 cup chopped fresh cilantro
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper, to taste
  • Cooking spray or oil, for cooking

For Serving:

  • Sour cream
  • Guacamole
  • Salsa

Instructions:

  1. Prepare the Filling:
    • In a bowl, mix shredded cheese, cooked and shredded chicken or beef (if using), diced tomatoes, diced red onions, chopped cilantro, ground cumin, chili powder, salt, and pepper.
  2. Assemble the Quesadillas:
    • Lay out 4 tortillas on a clean surface.
    • Divide the filling mixture evenly among the tortillas, spreading it over one half of each tortilla.
    • Fold the other half of the tortilla over the filling to create a half-moon shape.
  3. Cook the Quesadillas:
    • Heat a large skillet or griddle over medium heat.
    • Lightly spray or brush the skillet with cooking spray or oil.
    • Carefully transfer the quesadillas to the skillet and cook for 2-3 minutes on each side, or until golden brown and crispy, and the cheese is melted.
  4. Serve:
    • Remove the quesadillas from the skillet and let them cool for a minute before slicing into wedges.
    • Serve hot with sour cream, guacamole, and salsa on the side for dipping.

Optional:

  • Customize your quesadillas by adding other ingredients like sliced jalapeños, black olives, cooked peppers, or beans.
