Argentinian Carbonada Recipe for 4 People

Ingredients:

  • 500g beef stew meat, cubed
  • 2 tablespoons vegetable oil
  • 2 onions, chopped
  • 2 cloves garlic, minced
  • 2 carrots, peeled and sliced
  • 2 potatoes, peeled and diced
  • 1 sweet potato, peeled and diced
  • 1/2 butternut squash, peeled and diced
  • 1 ear of corn, kernels removed
  • 1 bell pepper, diced
  • 1 cup canned diced tomatoes
  • 4 cups beef broth
  • 1/2 cup white wine
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • Salt and pepper, to taste
  • Fresh parsley, chopped for garnish

Instructions:

  1. Brown the Beef:
    • In a large pot, heat vegetable oil over medium-high heat.
    • Add the beef stew meat and brown on all sides. Remove from the pot and set aside.
  2. Saute Aromatics:
    • In the same pot, sauté chopped onions and minced garlic until softened.
  3. Add Vegetables and Spices:
    • Add sliced carrots, diced potatoes, sweet potatoes, butternut squash, corn kernels, and diced bell pepper to the pot.
    • Stir in canned diced tomatoes, beef broth, white wine, paprika, ground cumin, salt, and pepper.
  4. Simmer:
    • Bring the mixture to a boil, then reduce the heat to low.
    • Cover and simmer for about 1 hour or until the vegetables are tender and the flavors have melded together.
  5. Serve:
    • Ladle the carbonada into bowls and garnish with chopped fresh parsley.
    • Serve hot and enjoy the comforting flavors of Argentinian cuisine!

Optional:

  • You can add other vegetables such as peas, green beans, or squash according to your preference.
