Colombian Bandeja Paisa Recipe for 4 People
Ingredients:
- 1 pound ground beef
- 1 cup cooked white rice
- 1 cup cooked red beans
- 4 slices of bacon
- 4 eggs
- 2 ripe plantains, sliced
- 2 avocados, sliced
- 2 tomatoes, sliced
- 1 cup hogao (Colombian tomato and onion sauce)
- 1 cup cooked chorizo sausage, sliced
- 1 cup cooked pork belly, sliced
- 1 cup arepa (Colombian cornmeal cake)
- Salt and pepper to taste
- Vegetable oil for frying
Instructions:
- Cook the Beans and Rice:
- Prepare the white rice and red beans separately according to package instructions. Set aside.
- Prepare the Hogao:
- Make the hogao sauce by cooking onions, tomatoes, and garlic in a skillet until soft. Season with salt and pepper to taste. Set aside.
- Fry the Ingredients:
- In a large skillet, fry the bacon until crispy. Remove and set aside.
- Fry the plantains until golden brown. Remove and set aside.
- Fry the eggs sunny-side up in the same skillet. Set aside.
- Cook the Meats:
- In the same skillet, cook the ground beef, chorizo sausage, and pork belly until browned and cooked through. Set aside.
- Assemble the Bandeja Paisa:
- Arrange a portion of cooked rice, beans, ground beef, chorizo, and pork belly on each plate.
- Add a slice of bacon, fried plantains, avocado, tomato slices, and arepa to each plate.
- Place a fried egg on top of each plate.
- Serve with a generous spoonful of hogao sauce on the side.
