Pot-Au-Feu Recipe for 4 People

Ingredients:

  • 1 kg (2.2 lbs) beef brisket or chuck roast
  • 4 marrow bones
  • 4 carrots, peeled and cut into chunks
  • 4 potatoes, peeled and quartered
  • 2 leeks, trimmed and cut into chunks
  • 2 onions, peeled and quartered
  • 4 cloves garlic, peeled
  • 2 bay leaves
  • 6 peppercorns
  • 2 cloves
  • Salt, to taste
  • Fresh parsley, chopped for garnish

Instructions:

  1. Prepare Ingredients:

    • Tie the beef brisket or chuck roast with kitchen twine to hold its shape during cooking.
    • Place the marrow bones in a pot and cover with cold water. Bring to a boil, then reduce heat and simmer for 10 minutes. Drain and set aside.
  2. Cook Pot-Au-Feu:

    • In a large pot, place the tied beef, blanched marrow bones, carrots, potatoes, leeks, onions, garlic, bay leaves, peppercorns, cloves, and salt.
    • Cover with cold water, ensuring all ingredients are submerged.
  3. Simmer:

    • Bring the pot to a gentle boil, then reduce heat to low. Skim any foam or impurities that rise to the surface.
    • Simmer the pot-au-feu, partially covered, for 2.5 to 3 hours, or until the meat is tender and the vegetables are cooked through.
  4. Serve:

    • Remove the beef and marrow bones from the pot and transfer to a serving platter.
    • Arrange the cooked vegetables around the meat.
    • Ladle some of the broth into bowls and serve alongside the meat and vegetables.
    • Garnish with chopped parsley before serving.
