Turkish Menemen Recipe for 4 People

Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 green peppers, sliced
  • 2 red peppers, sliced
  • 4 tomatoes, diced
  • 4 eggs
  • Salt and pepper, to taste
  • 1 teaspoon red pepper flakes (optional)
  • Fresh parsley, chopped for garnish

Instructions:

  1. Saute Vegetables:
    • Heat olive oil in a large pan over medium heat.
    • Add finely chopped onion and sauté until softened.
  2. Add Peppers:
    • Add sliced green and red peppers to the pan. Cook until the peppers are slightly tender.
  3. Tomatoes In:
    • Stir in diced tomatoes. Cook until the tomatoes break down and the mixture becomes saucy.
  4. Season:
    • Season the mixture with salt, pepper, and red pepper flakes if using. Stir well.
  5. Crack the Eggs:
    • Make wells in the mixture for each egg. Crack the eggs into the wells.
  6. Cook the Eggs:
    • Cover the pan and cook until the eggs are set to your liking. This usually takes about 5-7 minutes.
  7. Garnish and Serve:
    • Sprinkle with fresh parsley for garnish.
    • Serve the Menemen hot, directly from the pan.

Optional:

  • Serve with crusty bread or flatbread for a complete meal.
