  • 2 tablespoons vegetable oil
  • 2 tablespoons all-purpose flour
  • 1 liter (4 cups) beef or vegetable broth
  • 2 tablespoons tomato paste
  • 2 bay leaves
  • 1 teaspoon thyme
  • Salt and pepper, to taste
  • Fresh parsley, chopped for garnish

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 160°C (320°F).
  2. Brown the Meat:
    • In a large oven-safe pot, heat vegetable oil over medium-high heat.

    • In the same pot, sauté onions and garlic until softened.
    • Add flour and cook for an additional 1-2 minutes.
  4. Deglaze and Add Ingredients:

  5. Simmer and Bake:
    • Bring the stew to a simmer on the stovetop.
    • Cover the pot and transfer it to the preheated oven.
    • Bake for about 2 hours or until the lamb is tender.
  6. Garnish and Serve:
    • Remove the bay leaves and adjust seasoning if needed.
    • Sprinkle with chopped fresh parsley before serving.

Optional:
