Irish Stew Recipe for 4 People
Ingredients:
- 1.5 kg (3.3 lbs) lamb shoulder, cut into chunks
- 4 large potatoes, peeled and diced
- 3 carrots, peeled and sliced
- 2 onions, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons vegetable oil
- 2 tablespoons all-purpose flour
- 1 liter (4 cups) beef or vegetable broth
- 2 tablespoons tomato paste
- 2 bay leaves
- 1 teaspoon thyme
- Salt and pepper, to taste
- Fresh parsley, chopped for garnish
Instructions:
- Preheat Oven:
- Preheat your oven to 160°C (320°F).
- Brown the Meat:
- In a large oven-safe pot, heat vegetable oil over medium-high heat.
- Brown the lamb chunks on all sides. Remove from the pot and set aside.
- Saute Vegetables:
- In the same pot, sauté onions and garlic until softened.
- Add flour and cook for an additional 1-2 minutes.
- Deglaze and Add Ingredients:
- Pour in the broth to deglaze the pot, scraping up any browned bits.
- Add the browned lamb, potatoes, carrots, tomato paste, bay leaves, thyme, salt, and pepper.
- Simmer and Bake:
- Bring the stew to a simmer on the stovetop.
- Cover the pot and transfer it to the preheated oven.
- Bake for about 2 hours or until the lamb is tender.
- Garnish and Serve:
- Remove the bay leaves and adjust seasoning if needed.
- Sprinkle with chopped fresh parsley before serving.
