Colcannon Recipe for 4 People

Ingredients:

  • 1.5 kg (3.3 lbs) potatoes, peeled and quartered
  • 4 cups shredded cabbage or kale
  • 1 cup leeks, finely sliced
  • 1 cup whole milk
  • 1/2 cup unsalted butter
  • Salt and black pepper, to taste
  • Chopped fresh chives for garnish

Instructions:

  1. Boil Potatoes:
    • Place the peeled and quartered potatoes in a large pot of salted water.
    • Boil until tender, approximately 15-20 minutes.
  2. Prepare Greens:
    • In a separate pot, cook the shredded cabbage or kale in boiling salted water until softened, about 5-7 minutes.
    • Drain and set aside.
  3. Cook Leeks:
    • In a pan over medium heat, sauté the finely sliced leeks in a tablespoon of butter until they are soft and translucent.
  4. Mash Potatoes:
    • Drain the boiled potatoes and return them to the pot.
    • Mash the potatoes, gradually adding warm milk and butter until smooth and creamy.
  5. Combine Ingredients:
    • Fold in the cooked cabbage or kale and sautéed leeks into the mashed potatoes.
    • Season with salt and black pepper to taste. Mix well.
  6. Serve:
    • Transfer the colcannon to a serving dish.
    • Create a well in the center and add a pat of butter.
  7. Garnish and Enjoy:
    • Garnish with chopped fresh chives.
    • Serve the colcannon hot as a comforting side dish.

Optional:

  • Some variations include adding chopped scallions or bacon for extra flavor.
