Irish Guinness Pie Recipe for 4 People

Ingredients:

  • 500g (1.1 lbs) stewing beef, cubed
  • 2 tablespoons all-purpose flour
  • Salt and black pepper, to taste
  • 2 tablespoons vegetable oil
  • 2 onions, finely chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 2 cloves garlic, minced
  • 330ml (11.2 oz) Guinness stout
  • 2 tablespoons tomato paste
  • 2 bay leaves
  • 1 teaspoon thyme
  • 500g (1.1 lbs) puff pastry
  • 1 egg, beaten (for egg wash)

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 180°C (350°F).
  2. Coat Beef and Brown:
    • Toss the cubed beef in flour, salt, and black pepper.
    • In a large oven-safe pot, heat vegetable oil over medium-high heat.
    • Brown the beef cubes on all sides. Remove from the pot and set aside.
  3. Sauté Vegetables:
    • In the same pot, sauté chopped onions, sliced carrots, sliced celery, and minced garlic until softened.
  4. Deglaze and Add Ingredients:
    • Pour in the Guinness stout to deglaze the pot, scraping up any browned bits.
    • Add the browned beef back to the pot.
    • Stir in tomato paste, bay leaves, and thyme.
  5. Simmer and Bake:
    • Bring the mixture to a simmer on the stovetop.
    • Cover the pot and transfer it to the preheated oven.
    • Bake for 1.5 to 2 hours or until the beef is tender.
  6. Prepare Puff Pastry:
    • Roll out the puff pastry on a floured surface to fit the size of your baking dish.
  7. Assemble and Bake Again:
    • Remove the pot from the oven and discard the bay leaves.
    • Place the rolled-out puff pastry over the beef mixture.
    • Brush the pastry with the beaten egg for a golden finish.
    • Return the pot to the oven and bake until the pastry is golden brown and puffed.
  8. Serve:
    • Allow the Guinness pie to cool slightly before serving.
