Ingredients:

  • 500g stale bread, cut into small pieces
  • 150ml olive oil
  • 200g chorizo, cut into small pieces
  • 200g bacon bits
  • 4 cloves of garlic, minced
  • 2 tablespoons sweet paprika
  • Salt, to taste
  • Water (optional)

Instructions:

  1. Soften the Bread:
    • Lightly moisten the bread pieces with water, if needed, to soften them without soaking.
  2. Heat the Oil:
    • In a large skillet, heat the olive oil over medium heat.
  3. Add Chorizo and Bacon:
    • Add chorizo and bacon bits to the skillet. Sauté until they begin to brown.
  4. Add Garlic and Paprika:
    • Add minced garlic and sweet paprika to the skillet. Stir well to infuse the flavors.
  5. Incorporate the Bread:
    • Add the bread pieces to the skillet, stirring constantly to coat them with oil and spices.
  6. Cook on Low Heat:
    • Reduce the heat and let it cook gently, stirring frequently, until the migas are golden and crispy.
  7. Adjust Seasoning:
    • Season with salt to taste. Adjust the consistency by adding a little water if needed.
  8. Serve Hot:
    • The migas are ready to be served hot. They can be accompanied by grilled peppers, raisins, or a fried egg.
