Russian Pelmeni Recipe for 4 People

Ingredients:

  • 400g (14 oz) ground beef
  • 400g (14 oz) ground pork
  • 2 cups all-purpose flour
  • 2 eggs
  • 1/2 cup water
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • Sour cream or melted butter, for serving
  • Fresh parsley, chopped for garnish

Instructions:

  1. Prepare the Dough:
    • In a large mixing bowl, combine flour, eggs, and water. Knead until a smooth dough forms.
    • Cover the dough with a damp cloth and let it rest for about 30 minutes.
  2. Make the Filling:
    • In another bowl, mix together ground beef, ground pork, chopped onion, minced garlic, salt, and pepper until well combined.
  3. Form the Pelmeni:
    • Roll out the dough on a floured surface until very thin.
    • Use a round cookie cutter or glass to cut out circles of dough.
    • Place a small amount of filling in the center of each dough circle.
    • Fold the dough over the filling to form a half-moon shape and pinch the edges tightly to seal.
  4. Cook the Pelmeni:
    • Bring a large pot of salted water to a boil.
    • Carefully drop the pelmeni into the boiling water and cook until they float to the surface, about 5-7 minutes.
  5. Serve:
    • Remove the pelmeni from the water with a slotted spoon and place them in a serving bowl.
    • Serve hot with sour cream or melted butter drizzled on top.
    • Garnish with chopped fresh parsley.

Optional:

  • You can freeze any leftover uncooked pelmeni for later use.
