Russian Recipe for 4 People
Ingredients:
- 500g (1.1 lbs) beef chuck or stewing beef, diced
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 2 carrots, peeled and grated
- 2 medium beets, peeled and grated
- 2 potatoes, peeled and diced
- 4 cups beef or vegetable broth
- 2 tablespoons tomato paste
- 2 bay leaves
- 1 teaspoon dried dill
- 1 teaspoon dried thyme
- Salt and pepper, to taste
- Sour cream and fresh dill, for serving
Instructions:
- Brown the Beef:
- In a large pot, heat vegetable oil over medium-high heat.
- Add diced beef and brown on all sides. Remove from the pot and set aside.
- Saute Vegetables:
- In the same pot, sauté chopped onion until translucent.
- Add grated carrots and grated beets. Cook until the vegetables are softened.
- Add Remaining Ingredients:
- Return the browned beef to the pot.
- Add diced potatoes, beef or vegetable broth, tomato paste, bay leaves, dried dill, dried thyme, salt, and pepper. Stir well to combine.
- Simmer:
- Bring the mixture to a boil, then reduce the heat to low.
- Cover and simmer for about 1 hour, or until the beef and vegetables are tender.
- Serve:
- Ladle the borscht into bowls.
- Serve hot, garnished with a dollop of sour cream and fresh dill.
Optional:
- Add a splash of vinegar or lemon juice for a tangier flavor.
- You can also add shredded cabbage or chopped parsley for extra texture and flavor.
