Borscht

Russian Recipe for 4 People

Ingredients:

  • 500g (1.1 lbs) beef chuck or stewing beef, diced
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 2 carrots, peeled and grated
  • 2 medium beets, peeled and grated
  • 2 potatoes, peeled and diced
  • 4 cups beef or vegetable broth
  • 2 tablespoons tomato paste
  • 2 bay leaves
  • 1 teaspoon dried dill
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • Sour cream and fresh dill, for serving

Instructions:

  1. Brown the Beef:
    • In a large pot, heat vegetable oil over medium-high heat.
    • Add diced beef and brown on all sides. Remove from the pot and set aside.
  2. Saute Vegetables:
    • In the same pot, sauté chopped onion until translucent.
    • Add grated carrots and grated beets. Cook until the vegetables are softened.
  3. Add Remaining Ingredients:
    • Return the browned beef to the pot.
    • Add diced potatoes, beef or vegetable broth, tomato paste, bay leaves, dried dill, dried thyme, salt, and pepper. Stir well to combine.
  4. Simmer:
    • Bring the mixture to a boil, then reduce the heat to low.
    • Cover and simmer for about 1 hour, or until the beef and vegetables are tender.
  5. Serve:
    • Ladle the borscht into bowls.
    • Serve hot, garnished with a dollop of sour cream and fresh dill.

Optional:

  • Add a splash of vinegar or lemon juice for a tangier flavor.
  • You can also add shredded cabbage or chopped parsley for extra texture and flavor.
