Moroccan Tajine

 

Moroccan Tajine Recipe for 4 People

Ingredients:

  • 800g (1.75 lbs) lamb, beef, or chicken, cut into chunks
  • 2 onions, finely chopped
  • 3 cloves garlic, minced
  • 2 tomatoes, diced
  • 2 carrots, peeled and sliced
  • 2 potatoes, peeled and diced
  • 1 zucchini, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • Handful of green olives
  • Handful of raisins (optional)
  • Handful of chopped fresh cilantro
  • Handful of chopped fresh parsley
  • 2 tablespoons olive oil
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cumin
  • 1 teaspoon ground paprika
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cinnamon
  • Salt and pepper, to taste
  • 1 preserved lemon, quartered (optional)
  • 1 cup chicken or vegetable broth

Instructions:

  1. Prepare Ingredients:
    • In a large bowl, toss the meat with the ground ginger, ground cumin, ground paprika, ground turmeric, ground cinnamon, salt, and pepper. Let it marinate for at least 30 minutes.
    • In a separate bowl, soak the raisins in warm water for 15 minutes (if using).
  2. Saute Onions and Garlic:
    • Heat olive oil in a tajine pot or large skillet over medium heat.
    • Add chopped onions and minced garlic. Cook until softened and fragrant.
  3. Brown the Meat:
    • Add the marinated meat to the pot. Brown the meat on all sides.
  4. Add Vegetables and Spices:
    • Stir in diced tomatoes, sliced carrots, diced potatoes, sliced zucchini, sliced red bell pepper, and sliced green bell pepper.
    • Add green olives and soaked raisins (if using).
    • Sprinkle with chopped fresh cilantro and parsley.
    • Place the preserved lemon quarters on top (if using).
    • Pour in chicken or vegetable broth.
  5. Simmer:
    • Cover the pot and simmer over low heat for 1.5 to 2 hours, or until the meat is tender and the vegetables are cooked through. Stir occasionally and add more broth if needed.
  6. Serve:
    • Garnish with additional chopped fresh cilantro and parsley.
    • Serve the Moroccan tajine hot with couscous or bread for soaking up the delicious sauce.
