Italian Bruschetta Recipe for 4 People

Ingredients:

  • 4 large ripe tomatoes, diced
  • 2 cloves garlic, minced
  • 1/4 cup fresh basil leaves, chopped
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper, to taste
  • 4 slices of rustic Italian bread, about 1 inch thick
  • 2 tablespoons olive oil for brushing

Instructions:

  1. Prepare the Tomato Mixture:
    • In a bowl, combine diced tomatoes, minced garlic, chopped basil, extra virgin olive oil, balsamic vinegar, salt, and pepper. Mix well to combine. Set aside to marinate while you prepare the bread.
  2. Prepare the Bread:
    • Preheat a grill pan or grill over medium heat.
    • Brush both sides of the bread slices with olive oil.
  3. Grill the Bread:
    • Grill the bread slices for 2-3 minutes on each side, or until they are toasted and have grill marks.
  4. Assemble the Bruschetta:
    • Arrange the grilled bread slices on a serving platter.
    • Spoon the tomato mixture generously over each bread slice, allowing some of the juices to soak into the bread.
  5. Serve:
    • Serve the bruschetta immediately while the bread is still warm.

Optional:

  • You can sprinkle some grated Parmesan cheese on top of the tomato mixture for added flavor.
  • You can also drizzle a little more balsamic vinegar over the bruschetta before serving.
