Algerian Constantine Trida Recipe for 4 People

Ingredients:

  • 500g lamb or beef, cut into cubes
  • 2 onions, finely chopped
  • 2 tomatoes, diced
  • 2 carrots, sliced
  • 2 zucchinis, sliced
  • 2 potatoes, peeled and diced
  • 1 cup chickpeas, soaked overnight
  • 1 cup vermicelli noodles
  • 1/4 cup olive oil
  • 2 tablespoons tomato paste
  • 1 tablespoon paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • Salt and pepper, to taste
  • Fresh parsley or cilantro, chopped for garnish

Instructions:

  1. Prepare the Meat:
    • In a large pot, heat olive oil over medium heat.
    • Add chopped onions and cook until softened.
    • Add the meat cubes and brown on all sides.
  2. Add Vegetables:
    • Stir in diced tomatoes, sliced carrots, zucchinis, and potatoes.
    • Add soaked chickpeas, tomato paste, paprika, ground cumin, ground coriander, salt, and pepper.
  3. Simmer:
    • Pour enough water to cover all ingredients.
    • Bring to a boil, then reduce heat and simmer for about 1 hour or until the meat and vegetables are tender.
  4. Cook Vermicelli:
    • In a separate pot, cook vermicelli noodles according to package instructions. Drain and set aside.
  5. Serve:
    • To serve, place a portion of cooked vermicelli in each serving bowl.
    • Ladle the hot Trida soup over the vermicelli.
    • Garnish with chopped parsley or cilantro.

Optional:

  • You can add additional spices such as turmeric or cinnamon for extra flavor.
  • Serve with lemon wedges on the side for squeezing over the soup.
