Tunisian Borzguène Recipe for 4 People

Ingredients:

  • 500g lamb or beef, cubed
  • 2 onions, finely chopped
  • 4 cloves garlic, minced
  • 2 tomatoes, diced
  • 2 tablespoons tomato paste
  • 2 tablespoons olive oil
  • 1 tablespoon harissa paste (adjust to taste)
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1/2 teaspoon turmeric
  • Salt and pepper, to taste
  • 1 liter (4 cups) water or broth
  • Fresh parsley, chopped for garnish

Instructions:

  1. Prepare the Meat:
    • In a large pot, heat olive oil over medium heat.
    • Add the cubed meat and brown on all sides.
  2. Saute Aromatics:
    • Add the chopped onions and minced garlic to the pot. Cook until softened and fragrant.
  3. Add Tomatoes and Spices:
    • Stir in diced tomatoes, tomato paste, harissa paste, ground cumin, ground coriander, paprika, turmeric, salt, and pepper. Mix well to combine.
  4. Simmer:
    • Pour in water or broth to cover the meat and vegetables.
    • Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 1.5 to 2 hours, or until the meat is tender.
  5. Adjust Seasoning and Serve:
    • Taste and adjust the seasoning if needed.
    • Garnish with chopped fresh parsley before serving.

Optional:

  • You can add potatoes, carrots, or chickpeas to the borzguène for extra flavor and heartiness.
