Tunisian Boulis Mkatef Recipe for 4 People
Ingredients:
- 500g lamb or beef, cut into cubes
- 1 onion, finely chopped
- 2 tomatoes, diced
- 2 tablespoons tomato paste
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- 1/2 teaspoon turmeric
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 4 eggs
- Fresh parsley, chopped for garnish
Instructions:
- Saute Onions and Garlic:
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and minced garlic. Saute until softened.
- Brown the Meat:
- Add the cubed lamb or beef to the pot. Cook until browned on all sides.
- Add Spices and Tomatoes:
- Stir in ground cumin, ground coriander, paprika, turmeric, salt, and pepper.
- Add diced tomatoes and tomato paste. Mix well to combine.
- Simmer:
- Pour in enough water to cover the meat and vegetables. Bring to a boil.
- Reduce heat to low, cover, and simmer for about 1 to 1.5 hours until the meat is tender and the sauce is thickened.
- Poach Eggs:
- Once the meat is cooked, create wells in the sauce and crack the eggs into the wells.
- Cover and simmer for an additional 5-7 minutes until the eggs are cooked to your liking.
- Serve:
- Sprinkle with chopped fresh parsley for garnish.
- Serve hot with crusty bread or couscous.
Optional:
- You can add chopped bell peppers or hot peppers for extra flavor and heat.
