Tunisian Boulis Mkatef Recipe for 4 People

Ingredients:

  • 500g lamb or beef, cut into cubes
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 2 tablespoons tomato paste
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1/2 teaspoon turmeric
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 4 eggs
  • Fresh parsley, chopped for garnish

Instructions:

  1. Saute Onions and Garlic:
    • Heat olive oil in a large pot over medium heat.
    • Add chopped onion and minced garlic. Saute until softened.
  2. Brown the Meat:
    • Add the cubed lamb or beef to the pot. Cook until browned on all sides.
  3. Add Spices and Tomatoes:
    • Stir in ground cumin, ground coriander, paprika, turmeric, salt, and pepper.
    • Add diced tomatoes and tomato paste. Mix well to combine.
  4. Simmer:
    • Pour in enough water to cover the meat and vegetables. Bring to a boil.
    • Reduce heat to low, cover, and simmer for about 1 to 1.5 hours until the meat is tender and the sauce is thickened.
  5. Poach Eggs:
    • Once the meat is cooked, create wells in the sauce and crack the eggs into the wells.
    • Cover and simmer for an additional 5-7 minutes until the eggs are cooked to your liking.
  6. Serve:
    • Sprinkle with chopped fresh parsley for garnish.
    • Serve hot with crusty bread or couscous.

Optional:

  • You can add chopped bell peppers or hot peppers for extra flavor and heat.
