Chilean Cazuela Recipe for 4 People

Ingredients:

  • 500g (1.1 lbs) beef or chicken, cut into chunks
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 carrots, peeled and sliced
  • 2 potatoes, peeled and diced
  • 1/2 cup green beans, trimmed and halved
  • 1/2 cup pumpkin or squash, diced
  • 1 ear of corn, cut into 4 pieces
  • 1 cup cooked rice
  • 1 liter (4 cups) chicken or beef broth
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • Salt and pepper, to taste
  • Fresh cilantro or parsley, chopped for garnish

Instructions:

  1. Brown the Meat:
    • In a large pot, heat vegetable oil over medium-high heat.
    • Brown the beef or chicken chunks on all sides. Remove from the pot and set aside.
  2. Saute Vegetables:
    • In the same pot, sauté onions and garlic until softened.
    • Add carrots, potatoes, green beans, pumpkin or squash, and corn. Cook for a few minutes until vegetables start to soften.
  3. Add Meat and Broth:
    • Return the browned meat to the pot.
    • Pour in the chicken or beef broth, making sure the meat and vegetables are submerged.
    • Add ground cumin, paprika, dried oregano, salt, and pepper. Stir to combine.
  4. Simmer:
    • Bring the cazuela to a simmer over medium heat.
    • Cover the pot and let it simmer for about 30-40 minutes, or until the meat and vegetables are tender.
  5. Serve:
    • Ladle the cazuela into bowls.
    • Serve hot, garnished with chopped fresh cilantro or parsley.
    • Serve cooked rice on the side.

Optional:

  • You can add other vegetables like zucchini or bell peppers according to your preference.
  • Some variations include adding a spoonful of cooked beans to the cazuela.
