Chilean Cazuela Recipe for 4 People
Ingredients:
- 500g (1.1 lbs) beef or chicken, cut into chunks
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 2 carrots, peeled and sliced
- 2 potatoes, peeled and diced
- 1/2 cup green beans, trimmed and halved
- 1/2 cup pumpkin or squash, diced
- 1 ear of corn, cut into 4 pieces
- 1 cup cooked rice
- 1 liter (4 cups) chicken or beef broth
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon dried oregano
- Salt and pepper, to taste
- Fresh cilantro or parsley, chopped for garnish
Instructions:
- Brown the Meat:
- In a large pot, heat vegetable oil over medium-high heat.
- Brown the beef or chicken chunks on all sides. Remove from the pot and set aside.
- Saute Vegetables:
- In the same pot, sauté onions and garlic until softened.
- Add carrots, potatoes, green beans, pumpkin or squash, and corn. Cook for a few minutes until vegetables start to soften.
- Add Meat and Broth:
- Return the browned meat to the pot.
- Pour in the chicken or beef broth, making sure the meat and vegetables are submerged.
- Add ground cumin, paprika, dried oregano, salt, and pepper. Stir to combine.
- Simmer:
- Bring the cazuela to a simmer over medium heat.
- Cover the pot and let it simmer for about 30-40 minutes, or until the meat and vegetables are tender.
- Serve:
- Ladle the cazuela into bowls.
- Serve hot, garnished with chopped fresh cilantro or parsley.
- Serve cooked rice on the side.
Optional:
- You can add other vegetables like zucchini or bell peppers according to your preference.
- Some variations include adding a spoonful of cooked beans to the cazuela.
