Canadian Cipaille Recipe for 6 People
Ingredients:
- 500g (1 lb) lean beef, cubed
- 500g (1 lb) lean pork, cubed
- 500g (1 lb) chicken, cubed
- 2 onions, finely chopped
- 3 cloves garlic, minced
- 4 potatoes, peeled and diced
- 3 carrots, peeled and sliced
- 2 celery stalks, sliced
- 1 cup green peas
- 1 cup pearl onions
- 1 cup mushrooms, sliced
- 2 cups beef or chicken broth
- 1/2 cup red wine
- 1/4 cup all-purpose flour
- 1/4 cup butter
- 2 bay leaves
- 1 teaspoon dried thyme
- Salt and pepper, to taste
- Pastry dough for pie crust
Instructions:
- Prepare the Filling:
- In a large pot, melt the butter over medium heat.
- Add the onions and garlic, and sauté until softened.
- Add the beef, pork, and chicken cubes. Cook until browned on all sides.
- Sprinkle flour over the meat and stir until well coated.
- Add Vegetables and Seasonings:
- Stir in the potatoes, carrots, celery, green peas, pearl onions, and mushrooms.
- Pour in the beef or chicken broth and red wine.
- Add bay leaves, dried thyme, salt, and pepper.
- Bring to a simmer, then cover and cook for 1-1.5 hours, or until the meat is tender.
- Assemble the Cipaille:
- Preheat the oven to 180°C (350°F).
- Transfer the filling to a large baking dish.
- Roll out the pastry dough and place it over the filling, sealing the edges.
- Bake:
- Cut a few slits in the pastry to allow steam to escape.
- Bake in the preheated oven for 45-60 minutes, or until the crust is golden brown.
- Serve:
- Let the cipaille cool slightly before serving.
