Canadian Cipaille Recipe for 6 People

Ingredients:

  • 500g (1 lb) lean beef, cubed
  • 500g (1 lb) lean pork, cubed
  • 500g (1 lb) chicken, cubed
  • 2 onions, finely chopped
  • 3 cloves garlic, minced
  • 4 potatoes, peeled and diced
  • 3 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 1 cup green peas
  • 1 cup pearl onions
  • 1 cup mushrooms, sliced
  • 2 cups beef or chicken broth
  • 1/2 cup red wine
  • 1/4 cup all-purpose flour
  • 1/4 cup butter
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • Pastry dough for pie crust

Instructions:

  1. Prepare the Filling:
    • In a large pot, melt the butter over medium heat.
    • Add the onions and garlic, and sauté until softened.
    • Add the beef, pork, and chicken cubes. Cook until browned on all sides.
    • Sprinkle flour over the meat and stir until well coated.
  2. Add Vegetables and Seasonings:
    • Stir in the potatoes, carrots, celery, green peas, pearl onions, and mushrooms.
    • Pour in the beef or chicken broth and red wine.
    • Add bay leaves, dried thyme, salt, and pepper.
    • Bring to a simmer, then cover and cook for 1-1.5 hours, or until the meat is tender.
  3. Assemble the Cipaille:
    • Preheat the oven to 180°C (350°F).
    • Transfer the filling to a large baking dish.
    • Roll out the pastry dough and place it over the filling, sealing the edges.
  4. Bake:
    • Cut a few slits in the pastry to allow steam to escape.
    • Bake in the preheated oven for 45-60 minutes, or until the crust is golden brown.
  5. Serve:
    • Let the cipaille cool slightly before serving.
    • Serve hot and enjoy the delicious flavors of this traditional Canadian dish!
