Mexican Gorditas Recipe for 4 People
Ingredients:
- 2 cups masa harina (corn flour)
- 1 cup warm water
- 1/2 teaspoon salt
- 1 cup refried beans
- 1 cup cooked shredded chicken or beef
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- 1/2 cup crumbled queso fresco or shredded cheese
- 1/4 cup chopped fresh cilantro
- Salsa, for serving
- Sour cream, for serving
- Avocado slices, for serving
Instructions:
- Prepare the Dough:
- In a mixing bowl, combine masa harina and salt.
- Gradually add warm water and mix until a soft dough forms. If the dough is too dry, add more water, one tablespoon at a time.
- Form Gorditas:
- Divide the dough into 8 equal portions and roll each portion into a ball.
- Flatten each ball into a disc, about 1/4 inch thick and 4 inches in diameter.
- Cook Gorditas:
- Heat a griddle or skillet over medium-high heat.
- Cook gorditas for 2-3 minutes on each side, or until golden brown and cooked through.
- Remove from heat and let cool slightly.
- Assemble Gorditas:
- Slice each gordita horizontally, creating a pocket without cutting all the way through.
- Spread refried beans inside each pocket.
- Fill with shredded chicken or beef, lettuce, tomatoes, queso fresco, and chopped cilantro.
- Serve:
- Serve gorditas with salsa, sour cream, and avocado slices on the side.
