Mexican Gorditas Recipe for 4 People

Ingredients:

  • 2 cups masa harina (corn flour)
  • 1 cup warm water
  • 1/2 teaspoon salt
  • 1 cup refried beans
  • 1 cup cooked shredded chicken or beef
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup crumbled queso fresco or shredded cheese
  • 1/4 cup chopped fresh cilantro
  • Salsa, for serving
  • Sour cream, for serving
  • Avocado slices, for serving

Instructions:

  1. Prepare the Dough:
    • In a mixing bowl, combine masa harina and salt.
    • Gradually add warm water and mix until a soft dough forms. If the dough is too dry, add more water, one tablespoon at a time.
  2. Form Gorditas:
    • Divide the dough into 8 equal portions and roll each portion into a ball.
    • Flatten each ball into a disc, about 1/4 inch thick and 4 inches in diameter.
  3. Cook Gorditas:
    • Heat a griddle or skillet over medium-high heat.
    • Cook gorditas for 2-3 minutes on each side, or until golden brown and cooked through.
    • Remove from heat and let cool slightly.
  4. Assemble Gorditas:
    • Slice each gordita horizontally, creating a pocket without cutting all the way through.
    • Spread refried beans inside each pocket.
    • Fill with shredded chicken or beef, lettuce, tomatoes, queso fresco, and chopped cilantro.
  5. Serve:
    • Serve gorditas with salsa, sour cream, and avocado slices on the side.

Optional:

  • You can customize gorditas with your favorite fillings such as grilled vegetables, salsa verde, or pickled jalapeños.
