Icelandic Kjötsúpa Recipe for 4 People

Ingredients:

  • 500g lamb meat, diced
  • 2 carrots, peeled and sliced
  • 2 potatoes, peeled and diced
  • 1 onion, finely chopped
  • 2 celery stalks, sliced
  • 1 leek, sliced
  • 1 turnip, peeled and diced
  • 1 parsnip, peeled and sliced
  • 1/4 cup rice
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • Fresh parsley, chopped for garnish

Instructions:

  1. Prepare Ingredients:
    • Rinse the diced lamb meat under cold water and pat dry with paper towels.
    • Peel and chop all vegetables as directed.
  2. Cook Lamb:
    • In a large pot, heat some oil over medium-high heat.
    • Add the diced lamb meat and cook until browned on all sides.
  3. Add Vegetables and Herbs:
    • Add the chopped onion, carrots, potatoes, celery, leek, turnip, and parsnip to the pot.
    • Stir in the rice, bay leaves, and dried thyme.
    • Season with salt and pepper to taste.
  4. Simmer:
    • Pour enough water into the pot to cover all the ingredients.
    • Bring the mixture to a boil, then reduce the heat to low.
    • Cover and simmer for about 1.5 to 2 hours, or until the vegetables and meat are tender.
  5. Serve:
    • Once cooked, remove the bay leaves from the pot.
    • Ladle the Kjötsúpa into bowls and garnish with freshly chopped parsley.
    • Serve hot and enjoy the hearty Icelandic Kjötsúpa!

Optional:

  • Feel free to add other vegetables such as cabbage or rutabaga according to your preference.
  • Some variations of Kjötsúpa include adding a splash of cream or a dollop of sour cream before serving for extra richness.
