Mexican Mole Recipe for 4 People

Ingredients:

  • 4 chicken breasts, skinless and boneless
  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tomatoes, chopped
  • 2 dried ancho chilies, seeds removed
  • 2 dried guajillo chilies, seeds removed
  • 2 dried pasilla chilies, seeds removed
  • 1/4 cup almonds
  • 1/4 cup raisins
  • 1/4 cup sesame seeds
  • 2 tablespoons pumpkin seeds
  • 2 tablespoons unsweetened cocoa powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground coriander
  • 4 cups chicken broth
  • Salt and pepper, to taste
  • 2 tablespoons sugar, optional
  • 1 tablet Mexican chocolate (such as Abuelita or Ibarra), optional
  • Cooked rice, for serving
  • Sesame seeds and chopped cilantro, for garnish

Instructions:

  1. Prepare the Chilies:
    • Heat a skillet over medium heat. Toast the dried chilies for a few seconds on each side until fragrant. Be careful not to burn them.
    • Place the toasted chilies in a bowl and cover with hot water. Let them soak for about 20 minutes until softened.
  2. Make the Sauce:
    • In the same skillet, heat the vegetable oil over medium heat. Add chopped onion and minced garlic. Cook until softened.
    • Add chopped tomatoes and cook until they start to break down.
    • Drain the soaked chilies and add them to the skillet along with almonds, raisins, sesame seeds, pumpkin seeds, cocoa powder, cinnamon, cloves, cumin, and coriander. Cook for a few minutes until fragrant.
    • Transfer the mixture to a blender. Add chicken broth and blend until smooth.
  3. Cook the Chicken:
    • Season the chicken breasts with salt and pepper. In the same skillet, brown the chicken breasts on both sides.
    • Pour the mole sauce over the chicken. Bring to a simmer, then reduce the heat and let it cook for about 20-25 minutes until the chicken is cooked through and the sauce has thickened.
    • If desired, add sugar and Mexican chocolate to the sauce for a sweeter taste.
  4. Serve:
    • Serve the chicken mole hot over cooked rice.
    • Garnish with sesame seeds and chopped cilantro.
