Mexican Mole Recipe for 4 People
Ingredients:
- 4 chicken breasts, skinless and boneless
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tomatoes, chopped
- 2 dried ancho chilies, seeds removed
- 2 dried guajillo chilies, seeds removed
- 2 dried pasilla chilies, seeds removed
- 1/4 cup almonds
- 1/4 cup raisins
- 1/4 cup sesame seeds
- 2 tablespoons pumpkin seeds
- 2 tablespoons unsweetened cocoa powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/2 teaspoon ground cumin
- 1/4 teaspoon ground coriander
- 4 cups chicken broth
- Salt and pepper, to taste
- 2 tablespoons sugar, optional
- 1 tablet Mexican chocolate (such as Abuelita or Ibarra), optional
- Cooked rice, for serving
- Sesame seeds and chopped cilantro, for garnish
Instructions:
- Prepare the Chilies:
- Heat a skillet over medium heat. Toast the dried chilies for a few seconds on each side until fragrant. Be careful not to burn them.
- Place the toasted chilies in a bowl and cover with hot water. Let them soak for about 20 minutes until softened.
- Make the Sauce:
- In the same skillet, heat the vegetable oil over medium heat. Add chopped onion and minced garlic. Cook until softened.
- Add chopped tomatoes and cook until they start to break down.
- Drain the soaked chilies and add them to the skillet along with almonds, raisins, sesame seeds, pumpkin seeds, cocoa powder, cinnamon, cloves, cumin, and coriander. Cook for a few minutes until fragrant.
- Transfer the mixture to a blender. Add chicken broth and blend until smooth.
- Cook the Chicken:
- Season the chicken breasts with salt and pepper. In the same skillet, brown the chicken breasts on both sides.
- Pour the mole sauce over the chicken. Bring to a simmer, then reduce the heat and let it cook for about 20-25 minutes until the chicken is cooked through and the sauce has thickened.
- If desired, add sugar and Mexican chocolate to the sauce for a sweeter taste.
- Serve:
- Serve the chicken mole hot over cooked rice.
- Garnish with sesame seeds and chopped cilantro.
