Ingredients:
- 8 large flour tortillas
- 2 cups shredded cheese (cheddar, Monterey Jack, or a mix)
- 1 cup cooked and shredded chicken, beef, or beans (optional)
- 1/2 cup diced tomatoes
- 1/4 cup diced red onions
- 1/4 cup chopped fresh cilantro
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- Salt and pepper, to taste
- Cooking spray or oil, for cooking
For Serving:
- Sour cream
- Guacamole

Instructions:
- Prepare the Filling:
- In a bowl, mix shredded cheese, cooked and shredded chicken or beef (if using), diced tomatoes, diced red onions, chopped cilantro, ground cumin, chili powder, salt, and pepper.
- Assemble the Quesadillas:
- Lay out 4 tortillas on a clean surface.
- Divide the filling mixture evenly among the tortillas, spreading it over one half of each tortilla.
- Fold the other half of the tortilla over the filling to create a half-moon shape.
- Cook the Quesadillas:
- Heat a large skillet or griddle over medium heat.
- Lightly spray or brush the skillet with cooking spray or oil.
- Carefully transfer the quesadillas to the skillet and cook for 2-3 minutes on each side, or until golden brown and crispy, and the cheese is melted.
