Colombian Sancocho Recipe for 4 People

Ingredients:

  • 1 kg (2.2 lbs) chicken pieces (with bone-in)
  • 2 large ripe plantains, peeled and sliced
  • 2 large potatoes, peeled and cubed
  • 2 large cassavas (yuca), peeled and cut into chunks
  • 2 ears of corn, cut into chunks
  • 2 ripe tomatoes, diced
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 bunch of cilantro, chopped
  • 2 tablespoons vegetable oil
  • 2 liters (8 cups) chicken broth
  • 1 teaspoon ground cumin
  • Salt and pepper, to taste

Instructions:

  1. Prepare Ingredients:
    • Season the chicken pieces with salt and pepper.
    • Peel and chop all vegetables as indicated.
  2. Saute Aromatics:
    • Heat vegetable oil in a large pot over medium heat.
    • Add chopped onion, garlic, and bell pepper. Saute until softened.
  3. Add Chicken and Broth:
    • Add the seasoned chicken pieces to the pot. Brown on all sides.
    • Pour in the chicken broth and bring to a boil.
  4. Simmer Sancocho:
    • Once boiling, reduce heat to low. Cover and simmer for 30 minutes.
  5. Add Vegetables:
    • Add the plantains, potatoes, cassavas, and corn chunks to the pot.
    • Simmer for an additional 30 minutes or until vegetables are tender.
  6. Season and Serve:
    • Season the Sancocho with ground cumin, salt, and pepper to taste.
    • Stir in diced tomatoes and chopped cilantro.
    • Allow flavors to meld for a few minutes before serving.
  7. Enjoy:
    • Ladle the Colombian Sancocho into bowls and serve hot with rice, avocado, and lime wedges on the side.

Optional:

  • You can add additional vegetables like carrots or peas according to your preference.
  • Serve with aji or hot sauce for extra flavor.
