Colombian Sancocho Recipe for 4 People
Ingredients:
- 1 kg (2.2 lbs) chicken pieces (with bone-in)
- 2 large ripe plantains, peeled and sliced
- 2 large potatoes, peeled and cubed
- 2 large cassavas (yuca), peeled and cut into chunks
- 2 ears of corn, cut into chunks
- 2 ripe tomatoes, diced
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, chopped
- 1 bunch of cilantro, chopped
- 2 tablespoons vegetable oil
- 2 liters (8 cups) chicken broth
- 1 teaspoon ground cumin
- Salt and pepper, to taste
Instructions:
- Prepare Ingredients:
- Season the chicken pieces with salt and pepper.
- Peel and chop all vegetables as indicated.
- Saute Aromatics:
- Heat vegetable oil in a large pot over medium heat.
- Add chopped onion, garlic, and bell pepper. Saute until softened.
- Add Chicken and Broth:
- Add the seasoned chicken pieces to the pot. Brown on all sides.
- Pour in the chicken broth and bring to a boil.
- Simmer Sancocho:
- Once boiling, reduce heat to low. Cover and simmer for 30 minutes.
- Add Vegetables:
- Add the plantains, potatoes, cassavas, and corn chunks to the pot.
- Simmer for an additional 30 minutes or until vegetables are tender.
- Season and Serve:
- Season the Sancocho with ground cumin, salt, and pepper to taste.
- Stir in diced tomatoes and chopped cilantro.
- Allow flavors to meld for a few minutes before serving.
- Enjoy:
- Ladle the Colombian Sancocho into bowls and serve hot with rice, avocado, and lime wedges on the side.
