Caldeirada de Peixe Recipe for 4 People
Ingredients:
- 800g (1.76 lbs) mixed fish fillets (such as cod, haddock, salmon, and sea bass), cut into chunks
- 500g (1.1 lbs) potatoes, peeled and sliced
- 2 onions, thinly sliced
- 2 tomatoes, sliced
- 2 bell peppers (1 red, 1 green), sliced
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1 bay leaf
- 1/2 teaspoon paprika
- Salt and pepper to taste
- Olive oil
- 1 cup fish or vegetable broth
- 1/2 cup white wine
- Lemon wedges, for serving
Instructions:
- Prepare the Ingredients:
- Cut the fish fillets into chunks, peel and slice the potatoes, thinly slice the onions, chop the tomatoes, slice the bell peppers, mince the garlic, and chop the parsley.
- Layer the Ingredients:
- In a large pot or Dutch oven, drizzle some olive oil on the bottom.
- Layer half of the sliced potatoes on the bottom of the pot.
- Top the potatoes with half of the sliced onions, tomatoes, bell peppers, minced garlic, and chopped parsley.
- Place the fish chunks on top of the vegetables.
- Sprinkle the paprika over the fish and season everything with salt and pepper.
- Add the bay leaf on top.
- Repeat the Layers:
- Repeat the layering process with the remaining potatoes, onions, tomatoes, bell peppers, garlic, and parsley.
- Pour in the Liquids:
- Pour the fish or vegetable broth and white wine over the layered ingredients.
- Drizzle some more olive oil on top.
- Cook the Caldeirada:
- Cover the pot and bring the caldeirada to a simmer over medium heat.
- Reduce the heat to low and let it simmer gently for about 30-40 minutes, or until the potatoes are tender and the fish is cooked through.
- Serve:
- Once cooked, remove the bay leaf from the caldeirada.
- Serve the caldeirada de peixe hot, garnished with fresh parsley and accompanied by lemon wedges.
