Gibanica Recipe for 8 People
Ingredients:
- 500g (about 1 lb) phyllo dough sheets, thawed if frozen
- 300g (about 10.5 oz) feta cheese, crumbled
- 200g (about 7 oz) cottage cheese or ricotta cheese
- 200g (about 7 oz) shredded mozzarella cheese
- 4 eggs
- 200ml (about 3/4 cup) sour cream
- 100ml (about 1/3 cup) vegetable oil or melted butter
- Salt and pepper, to taste
- 1 tablespoon sesame seeds or poppy seeds for garnish (optional)
Instructions:
1. Prepare the Cheese Mixture:
- In a large mixing bowl, combine the crumbled feta cheese, cottage cheese or ricotta cheese, shredded mozzarella cheese, and eggs. Mix well until evenly combined. Season with salt and pepper to taste.
2. Preheat the Oven:
- Preheat your oven to 180°C (350°F). Grease a 9×13 inch baking dish with butter or oil.
3. Layer the Phyllo Dough:
- Place one sheet of phyllo dough in the prepared baking dish, allowing the edges to hang over the sides of the dish.
- Brush the phyllo sheet with vegetable oil or melted butter.
- Repeat layering with half of the phyllo sheets, brushing each layer with oil or butter.
4. Add the Cheese Mixture:
- Spread half of the cheese mixture evenly over the layered phyllo sheets.
5. Continue Layering:
- Layer the remaining phyllo sheets on top of the cheese mixture, brushing each sheet with oil or butter.
- Spread the remaining cheese mixture over the top layer of phyllo sheets.
6. Finish Layering:
- Fold the overhanging edges of the phyllo dough over the top of the cheese mixture to enclose it.
7. Bake:
- Brush the top of the gibanica with any remaining oil or butter.
- Sprinkle sesame seeds or poppy seeds over the top for garnish, if desired.
- Bake in the preheated oven for 35-45 minutes, or until the gibanica is golden brown and crispy on top.
8. Serve:
- Allow the gibanica to cool for a few minutes before slicing into squares or rectangles.
- Serve warm as a savory snack or side dish.
